KETO GERMAN CHOCOLATE COOKIES
Makes 22 cookies

1 cup almond flour
2 tablespoons oat fiber
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup sugar free brown sweetener
1/3 cup granulated sugar-free sweetener
1 egg
1 teaspoon vanilla extract
1 cup unsweetened coconut flakes
1/2 cup sugar free chocolate chips
1/2 cup chopped pecans

1️⃣ In a medium bowl, stir together almond flour, oat fiber, cocoa powder, baking soda and salt. Set aside.
2️⃣ In a large bowl, cream together butter and both sweeteners until light and fluffy (about 3-5 minutes) using an electric mixer. Mix in the egg and vanilla until combined.
3️⃣ Slowly add in dry ingredients and mix until combined. Stir in coconut, chocolate chips and nuts.
4️⃣ Pinch off about 2 tablespoons of dough and roll in between the palms of your hands to form a ball shape about 1 1/2 inches thick. Bake at 350 degrees for about 10 minutes. Remove from oven and immediately tap the tray on the counter to slightly deflate the cookies. Continue to let cool on the baking tray for about 3-5 minutes or until you can transfer them to a wire rack without them crumbling. Cookies will continue to harden as they cool.

I just turned one of my favorite cakes Into a cookie and it's keto these Cookies are incredibly soft and Cake-like and they are best right out of The oven they taste just like a German Chocolate cake so you get all that Flavor and texture of a cake but without The hassle of making a cake and it's Only 1.5 grams of carbs per cookie so Let's get to baking so you can get to Eating Starting out with our dry ingredients Add one cup of almond flour to a large Bowl now I haven't tried any other keto Flour other than almond flour so I'm not 100 sure how it would work but if I were To just try using a half a cup of Lupine Flour or maybe a quarter to a third cup Of coconut flour then add in two Tablespoons of oat fiber and this is a Zero carb additive that I've been Putting into a lot of my baked goods Lately mostly because it helps with Texture but also flavor then we need to Add the chocolate so it's a half of a Cup of unsweetened cocoa powder a half a Teaspoon of baking soda and a half a Teaspoon of salt whisk that together Until it's combined and then we'll set That aside moving on to the wet Ingredients cream together one stick or Half a cup of softened unsalted butter With a half a cup of packed Brown Sugar-free sweetener and the brand that
