TOMATO CHICKEN BURRATA
Serves: 6

2 pounds boneless skinless chicken thighs or breasts
salt & pepper for seasoning
½ cup almond flour
3 eggs, beaten
2 cups pork panko
2 teaspoon Italian seasoning
1 teaspoon garlic powder
Avocado oil, for frying
1 cup cherry tomatoes
8 oz burrata cheese

1️⃣ Season chicken with salt and pepper.
2️⃣ Grab three bowls or shallow plates. Place almond flour in one bowl, beaten eggs in the second bowl. The third bowl, combine pork panko with Italian seasoning and garlic powder.
3️⃣ Dust a piece of chicken with almond flour, then dip in the egg wash. Finally dredge in pork panko mixture to evenly coat the outside. Repeat with remaining chicken.
4️⃣ Heat enough avocado oil in a large skillet to cover the bottom of the skillet. Heat over medium high heat. Once oil is hot enough, place the breaded chicken into the pan leaving space around each piece. Flip after 3-4 minutes or until the bottom crust is golden brown. Repeat on the second side.
5️⃣ Transfer chicken to a paper towel lined plate. Add tomatoes to the skillet and sauté for a few minutes on high until they start to burst slightly. Season with salt & pepper.
6️⃣ Lower the heat to medium low and place the chicken back in the skillet. Add burrata throughout the skillet in between the chicken and cover. Let cook for 2-4 minutes or until the burrata starts to melt and ooze out. Remove from the heat.

ROMESCO CHICKEN
Serves: 4

1 cup sliced almonds
⅔ cup roasted red peppers, diced
⅔ cup halved cherry tomatoes
½ cup chopped parsley
2 cloves garlic
¼ cup olive oil
2 tablespoons sherry vinegar
2 teaspoons smoked paprika
½ teaspoon salt
4 chicken breasts (butterflied) or 6 chicken thighs

1️⃣ Add sliced almonds to a non-stick skillet. Cook over medium-high heat, stirring frequently to prevent burning. Lightly toast the almonds for 2-3 minutes. Remove from heat to cool.
2️⃣ To a food processor or blend, add toasted almonds and remaining ingredients.
3️⃣ Pulse or blend until smooth. Set aside.
4️⃣ Season chicken with salt and pepper. Pan cook in 3 T olive oil for 4-5 minutes each side. Or grill.

SKILLET MEATBALLS
Serves: 8

2 pounds ground beef
2 eggs
1 cup grated parmesan cheese
2/3 cup pork panko
2-3 tablespoons minced garlic
1 teaspoon salt
1 teaspoon seasoning salt
1 teaspoon pepper
1 teaspoon oregano
1/2 cup chopped fresh parsley
3 tablespoons avocado oil or olive oil
25 oz low carb marinara
1 1/2 cups shredded mozzarella cheese

1️⃣ Mix all ingredients except oil, marinara and cheese.
2️⃣ Pinch of some ground beef mixture and roll in between the palm on your hands to form a 1 inch ball. Repeat.
3️⃣ Add avocado oil or olive oil to a preheated skillet at medium heat. Working in batches, add meatballs to the skillet and cook for a few minutes on all sides until cooked through.
4️⃣ Return all meatballs back to the skillet. Pour in marinara sauce and top with shredded mozzarella cheese. Cover, turn down heat to low and let simmer for 5 minutes or until cheese is melted.

Interested I'll try and have it linked Down below to each of these we're adding Different ingredients first is a half a Cup of almond flour Then eggs And finally two cups of pork panko which Is just ground up pork rinds and to this One I'm also adding one teaspoon of Garlic powder and a teaspoon of Italian Seasoning Now it's time to coat our chicken taking A piece of chicken first we're gonna Dust it all around with the almond flour Then dip it into the egg wash and Finally dredge it into the pork panko to Completely coat it There are some substitutions if you Don't want to use almond flour you can Either just do a double coating of pork Panko or try using Lupine flour or Coconut flour and instead of pork panko You can try using grated Parmesan cheese Protein powder also works as a Substitute however it tends to burn Easier so you might have to lower your Heat when you're frying your chicken Next we're going to fry our breaded Chicken so pour some avocado oil into a Skillet you don't need too much just Enough to cover the bottom and then heat Your oil over medium high heat and you Know your oil is going to be hot enough When you throw in a crumb of your pork Panko and it starts to sizzle now you

Can add your chicken with this it's Important not to overcrowd your Skillet With chicken because if you do that it's Going to cause steaming which will make Your breading too soft and instead of Crispy and to get really crispy edges on Your chicken I like to slide the pan Back and forth along the burner to get Some of that oil to cover up the sides And on the top we're going to let this Fry for a few minutes until it's golden Brown and then flip it over and Fry the Other side for an additional three to Four minutes or until your chicken is Cooked through once it's cooked we'll Remove it and place it on a paper towel Lined plate and repeat this with your Remaining chicken next you can either Use the same Skillet which is ideal Because it would be a one pot recipe I'm Actually going to grab a new one because I had too much oil in this one then add In one cup of cherry tomatoes sautebies Over medium high heat until they start To Brown and burst slightly and release Their juices Once they look like this we're going to Add back in our breaded chicken to the Skillet and add about eight ounces of Burrata cheese burrata cheese is not Your basic mozzarella cheese it's gooey And creamy in the center and it's Generally richer and more flavorful Compared to regular mozzarella cheese

We'll cover this dish and we'll let it Simmer on low medium heat until the Cheese gets really soft and starts to Ooze out Well that's not gonna work I forgot this Pot doesn't have a lid that fits so I'm Going to improvise with a cookie sheet After a few minutes you can see your Burrata cheese is getting gooey and Starting to ooze out you can top it with Some chopped parsley and serve it just Like this or for some extra greens top It over some arugula mixed with salt and Lemon juice If you're looking for a dairy-free keto Recipe try making this easy romesco Sauce and you can pair it with chicken Or you could have it vegetarian if You're vegetarian or vegan keto and just Serve it over asparagus start by Toasting one cup of sliced almonds in a Skillet over medium-high heat and then You want to stir these occasionally just To prevent them from burning this is Going to take around two or three Minutes to get them nice and toasty Then remove them from the Heat and add Them to a small food processor or Blender We're also going to add 2 3 cup of diced Roasted red peppers 2 3 cup of half cherry tomatoes A half a cup of chopped parsley [Music]

Cloves of garlic 2 teaspoons of smoked Paprika a half a teaspoon of salt a Quarter teaspoon of red pepper flakes A quarter cup of olive oil and two Tablespoons of Sherry vinegar Blend this together until it's smooth And then you can heat this up and then Just spoon it over grilled chicken when You're ready to eat This romesco sauce can actually be made Ahead of time and then just stored in The refrigerator for up to five days This makes a very flavorful easy dinner If you do all the prep work ahead of Time This next meal is for those who don't Care about dairy or packaged keto Foods They just want delicious comfort food That will satisfy those carb Cravings One of our favorites are these keto Skillet meatballs start by adding two Pounds of ground beef to a large bowl Then two eggs One cup of grated Parmesan cheese [Music] Then 2 3 cup of pork panko Two to three tablespoons of minced Garlic or garlic paste one of my Shortcuts I like to use sometimes [Music] Then add one teaspoon of each salt Pepper seasoning salt and oregano then Chop up some fresh parsley about a half A cup

[Music] And mix everything together once it's Combined roll these into one inch or one And a half inch size balls you can get Around 42 meatballs out of this if you Make around one inch balls [Music] To cook the meatballs just add in a few Tablespoons of avocado oil into a Skillet and then working in batches you Want to add in the meatballs again we Don't want our meatballs to steam cook You want to have some space around them So your edges of your meatballs get Crispy And then as the cookie just roll them Around to cook on all sides I'll remove These from the skillet and then add in Some new ones after they're done cooking [Music] Once they're all done cooking we're Going to add them all back to the Skillet and then add in 25 ounces of a Low carb marinara sauce [Music] Along with one and a half cups of Shredded mozzarella cheese then just Cover and let this cook until the cheese Is melted And then you can top this over your Favorite keto noodles or just eat it Just like this This cheesy deliciousness is just one of The many comfort food favorites that
