No matter your keto goals or simply seeking an enjoyable dish without extra carbs and calories, cauliflower mashed keto is an excellent dish to consider! Creamy, delicious and full of flavor without the additional calories and carbs!
This delicious low-carb side dish is easy to make and versatile enough to accompany different meals, making it a fantastic choice for people with gluten or dairy intolerances.
1. Steaming
Steaming cauliflower florets over simmering water is one of the easiest and fastest ways to create tender, soft cauliflower. Just be sure that your steamer basket can accommodate all of the cauliflower.
When steaming cauliflower on the stovetop, it’s essential that you keep an eye on it to make sure it doesn’t become mushy or start becoming dry – this is why it is better to steam than boil.
Once cauliflower has been cooked, drain it carefully in a colander to remove as much moisture as possible. If there remains excess liquid after draining, a simple way to deal with this issue would be to boil your mash further to evaporate some of its excess moisture – this will ensure creamy and smooth textures!
2. Blending
I strive to create keto cauliflower mashed potatoes that are as creamy and velvety as possible, which means using my food processor as much as possible! It certainly gets the job done!
Mash the cauliflower using either a potato masher or electric mixer; however, I find using my processor much faster and simpler!
Once it has been pureed, add butter and cream cheese and mix until fully combined. For an additional touch, you may wish to include some sour cream or garlic powder for texture.
This recipe makes an excellent side dish to compliment any meal, especially chicken and pork chops roasted over an open flame. Plus, use it as a topping for Shepherd’s pie!
3. Seasoning
Mashed cauliflower makes an excellent low-carb alternative to traditional mashed potatoes, though the texture differs significantly and requires some skill and experience in order to produce creamy and smooth results.
Key to this recipe is using heavy whipping cream and some butter; this makes for deliciously creamy cauliflower mash!
Add a pinch of xanthan gum to this recipe to thicken and preserve.
Be careful when steaming cauliflower; overcooking will result in watery mush.
Use either a double boiler or steamer for this process, taking great caution as steam is extremely hot and can burn you!
Once cauliflower has been steamed, drain it well over the sink to release any excess moisture and prevent an unaedible watery mash.
4. Garnishing
Those who enjoy mashed potatoes will adore this creamy cauliflower version! It makes an excellent side dish to complement any keto meal.
Add an extra burst of flavor to this mash by topping it off with any of your preferred garnishes – such as sour cream, cheddar cheese, chives or green onions (whichever your family enjoys most! ).
Once cauliflower has been steamed, drain and place in a mixing bowl. Use either a manual potato masher or hand mixer to smash it until smooth and creamy texture emerges.
Next, combine chunks of butter, heavy whipping cream, salt and pepper. Combine well before pouring into a casserole dish. Decorate its surface with remaining shredded cheese and cooked bacon strips as garnish.
