KETO NO BAKE COOKIES
Makes 24
1 cup sugar-free sweetener
½ cup heavy cream
½ cup unsalted butter
¼ cup unsweetened cocoa powder
2 cups unsweetened shredded coconut
1 cup chopped almonds
1 cup no-sugar added peanut butter
¼ cup oat fiber
1 tablespoon vanilla extract
pinch of salt
1️⃣ Add sweetener, cream, butter and cocoa powder to a large sauce pan. Heat over medium heat, stirring occasionally. Bring mixture to a boil and let boil for 1 minute. Remove from heat.
2️⃣ Stir in coconut, almonds, peanut butter, oat fiber, vanilla and salt.
3️⃣ Drop heaping tablespoons of the cookie mixture onto a parchment or wax paper lined baking tray. Freeze tray for 30-60 minutes or until cookies are cooled and hardened.

Not only are no bake cookies ideal when You don't have an oven but these have a Crunchy chocolatey oat flavor one that Is hard to replicate when you're low Carb because one cup of oats has around 50 grams of carbs but I found a way to Get that chocolatey oat flavor in these No bake cookies with only two carbs just Because I said we're not going to use an Oven it doesn't mean that we're not Going to use our stove top it's the Easiest way to combine these ingredients But heating some of these ingredients Also helps form the glue to hold these Cookies together start by adding one cup Of sugar-free sweetener to a saucepan I'm using allulose then a half a cup of Heavy cream One stick of unsalted butter Quarter cup of unsweetened cocoa powder Once the butter is melted and the Mixture starts boiling I set a timer to Let this boil for a minute and stir it Occasionally Then remove it from the heat now we add In our crunchy elements to these cookies Add in two cups of unsweetened shredded Coconut one cup of chopped almonds but You can use any of your favorite nuts Here to help hold these cookies together We're using peanut butter look for one That is no sugar added where peanuts is The only ingredient you could use other Nut Butters but I really like the flavor
Of peanut butter in this recipe then add One tablespoon of vanilla and a pinch of Salt mix that together Now I did mention that these cookies Will have some oat flavor without using Old-fashioned oats The way we do this without adding any Extra carbs is to add oat fiber a Quarter of a cup oat fiber is an Insoluble fiber that's made from finely Ground oat husks so it's zero carbs Scoop a heaping tablespoon of the Mixture on top of a parchment lined tray Then freeze these for 30 to 60 minutes Or until your cookies are set crunchy Gooey with a hint of oat flavor Wondering what else you can make with Oat fiber click right here because I Show you some of my favorites including Whoopie pies
