Tangy, Creamy, Refreshing & Delicious Cook cream in a saucepan = 400 g (1 1/2 cups + 3 tbsp) Whipping Cream (OR Double/Heavy Cream) 70 g (1/3 cup) Monk fruit (OR any keto friendly sweetener) Zest from 2 lemons Cook over low to medium heat Stir constantly until thickened If using double or heavy cream, it will thicken faster Once thickened, turn off heat 60 ml (1/4 cup) Fresh lemon juice Whisk to combine Strain to remove the lemon zest (optional) Pour into any serving cups or ramekins Chill for at least 1 to 2 hours OR until thickened You can also chill in the freezer to speed up the process Decorate with strawberries for a festive look Dust with powdered sweetener Smooth and creamy Tangy and refreshing Incredibly delicious The Best Keto Lemon Posset
